Let me introduce myself, I am an airline guy who just retired (last week). Currently cooking a spatchcock chicken on my modified Weber kettle. Inerds are from this website, Slow & Sear , Unknown Barbecue hinge, port for a double probe. I've done a number of pork products on the unit. Opps time for dinner.
