    First Time Smoker and New to the Pit

    Hi All,

    I'm getting bored with braising all my beef (I get a quarter cow every year or two), and want to start smoking it. Plus I want to make my own bacon and ribs. So, I'm 99% sure I'd enjoy a Pit Barrel Cooker, based on everything I've read on this excellent site. There's a store here in Portland, OR that sells them, so I'll be checking them out in the next couple days. That's my story.

                    I haven't even bought the smoker yet, but I did pull a chuck roast out of the freezer, and read the big thread on how to smoke it. It'll take a couple days to thaw, then I'll dry brine it for a few days. In the meantime, I think I'll go buy a rack of ribs to smoke as soon as I pick up the PBC.
