Hello everyone - I just signed up for the Pitmaster club last week. I've been reading Amazing Ribs for a couple of years and thought I'd like to learn more.

My grill is a PBC. Absolutely love this thing. It makes grilling so much fun. My favorite meat is Tri-Tip - which is odd for an Indiana guy - but it's leaner than brisket and takes much much less time to cook.
The best thing I've found to enhance my grilling is fresh spices (not ground) from SpiceTrekkers.com . It completely changed my rubs and the flavors of the meat. I HIGHLY recommend their stuff. When you think about it, when you grind spices it loses the essential oils - so taking fresh spices and waiting to grind them right before use - makes so much sense! More smell, more flavor! Shout to Zingerman's in Ann Arbor for the recommendation.
