Welcome from another newbie. You are right - there is so much info on this site it can be overwhelming, so I took the experts advice on wood types for smoking and applied it to cuts and types of meat, recipes, rubs, cooking methods, etc: just pick one and go for it until you find what you like. Also don't be scared about screwing up - it will happen at some point. Just use your fails as learning experiences. Like one of my foremen used to say when I was a young buck working construction, "if you never screw up, you ain't doing sh*t". Truer words have never been spoken. Have fun!
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

When you get a minute check out Pit Boss' Welcome & Announcements channel, as well as the tips posts in that channel. These will help you learn your way around The Pit, as well as set up your signature (tip #1) with your equipment. There's also a post that explains the best way to post nice big pics here... we like to see bragging pictures of your equipment and your cooks. We look forward to hearing more from you! Enjoy
