Belay that... this weekend I have a 14 pound CAB brisket scheduled... I just finished a couple reads on my kindle from Cole Landry and another by Aaron Franklin on their way of smoking briskets... both tend to cook a little hotter than I do so I am not sure I am ready to jump on their wagon just yet. I am still feeling out hot spots in the pellet eater and I am thinking of lowering the stack pipe on the outlet a bit to help out the airflow.... right now the center of my chamber runs 10-12* cooler than the electronic controller indicates off the factory chamber probe position.... I saw that in one of the three racks I burnt over the weekend.
I will post up any modifications I make to this thing that have a positive influence on making the chamber more consistent. I am just now getting to where I trust it for longer smokes.. it is less work than feeding sticks, but a tad less smoke than I am used too.. I overcome that by throwing in a smoke tube or lay pellets in the searing trays... it is well worth the small footprint in my back yard though and not having to worry about sourcing stacked wood.
