    Thanks Voodoo, i'll be sure to keep posting up pics, techniques and anything else i come across.

    My friends and family love my food and keep pushing me to go pro - as in open a BBQ place here in Sydney. Just ordered a pellet grill so now i can automate my cooking sessions. It will be interesting to see the results. It might be able to help me make the transition, who knows...

    I've always enjoyed cooking in general but i've had a secret passion for US BBQ all my life which i've only just tapped into properly. We don't have a good selection of authentic US BBQ places here which is why i decided to just learn and cook it all myself. Since i've started learning and doing it, i'm addicted. I enjoy the lengthy hours of grilling/smoking and the techniques involved. It's almost like my equivalent of yoga or meditation. It puts a smile on my face every time.

    This site has been a huge impact on my learning. It was almost like a fast track into the foundations of what to do and what to avoid. Once you've got that down, you can basically branch off and try different things and see what does or doesn't work.

    I plan to go on a food expedition from East to West Coast at some point in the near future so i can really get to appreciate everything that every region has to offer..

      When you say a food expedition, are you talking about an expedition to the U.S.?

      Also... I imagine that getting awesome cookers in Australia is hard to do and could be cost prohibitive in some cases... if you are thinking of going more commercial, you are going to need some capacity like a Lang or a Johnson can give you... it would be good for you, if you could find a good welder/fabricator type person to work with you on building what you need. And you never know if US style BBQ ever gets REAL popular there, that person could be plenty busy building cookers... just an idea. *shrug*

        Great ideas and the good news is the cookers are getting very popular here as is USA BBQ food but the problem is (at least from what I've noticed), it seems very watered down or changed. We can get Yoder and GMG pellet grills here now which is awesome and my father in law can make me something from scratch if it came to that. Heck he made the spit/smoker you see in those photos for me!

        I want to do real traditional, proper USA BBQ. There are a quite a few places here for example that do pulled pork but it's done in slow cookers and just doesn't have the flavor of the real thing. There are some great burger joints now and some places popping up that are adopting some of the techniques which is good to see. Ideally i'd love to get a food truck and go from there..

        With regards to the food expedition, yes i do mean the US. I want to do a huge trip around the US and try all the landmark/famous places in each region and get to appreciate it and learn some new ideas and techniques.
