    Hello from Iowa

    I have been lurking on Amazing Ribs for a while and have a cupboard full of rubs made from recipes on this site. THANK YOU! I am learning and finding new ways to turn my direct from the farmer-bought hogs into meat candy. I have a Weber Spirit E-210 that was given to me as a Father's Day present many years ago that has become a great indirect smoker. I am very interested in different woods with which to smoke. Bark on or bark off? How green is too green? Thank you for solving the chip soaking controversy (hee, hee). I have a family that consists of me and 5 women, all who love to eat the results of the grill. I am still a novice and look forward to learning more from the group.

    Welcome to The Pit IM_RSVP! Thanks for the support and nice to have you here! I use mostly cherry from fruitawood.com in my Kettles and BGE. I also like hickory and apple. Here's an article on wood that has a lot of great information. Hope to see you around often.

    Since this is your first post, please check out our homework assignment post for new members, it contains a few how-tos and please-dos. This will help you learn your way around so you can get the best experience from our forum.

                              Thank you for the warm welcome! Spinaker, I get my hogs from Pavelka Farms located just south of Mount Vernon (where we live). The hogs are raised outside in an old-fashioned way. They are superb!
