Long time BBQ'er here. Learned from my father who had a Hasty Bake for 45 years until it finally gave up the ghost a few years before he himself passed on. We used a plain ol' Weber kettle 'que for many years because I was career military and it was the easiest for us to move. We also had cheapo small electric smokers that would only last 3-4 years and we had no qualms about tossing them when it came time to move. Now that I am retired from the military and we no plans to move for the next ten years, I invested in a GMG wifi pellet grill and very happy with it. Once I burned it in and grilled up some great chicken breasts and veggies, I went to my local butcher and bought a full butcher cut brisket (18lbs), cut off the tip (@5lbs) and gave it a run the other day. Soooo good. I plan on smoking the flat tomorrow (Sun). I am here to learn and pick up as many recipes as I can fit in to my binder.
Cheers!
