    Hi All, I'm new here, and I wanted to introduce myself. I live in Buda, Texas, and I've been cooking outdoors much of my life, starting with open fire and Dutch Oven cooking in Boy Scouts more than 60 years ago. I had a Big Green Egg on a wheeled nest for several years until it rolled out of the workshop bay door, tipped over and smashed itself into lots of pieces. I now cook on a six or seven year old Weber Genesis 310 and an equally aged 22" Weber kettle. After following several of the recipes here for the Weber kettle, I don't seem to fire up the gas grill any more. I stumbled onto this website, bought a Slow n Sear and have been having more fun (and better food!) than ever before. I just added a ThermoWorks Smoke but haven't used it yet. I'm trying to get up my nerve to drill a couple of 3/8" holes just above the grate to accommodate the grill and meat probes. Happy to be here. I learned more in three hours browsing on this website than I learned in the previous 10 years of BBQing on my own. So I joined.

                    Welcome to The Pit Robert. Don't worry about drilling a hole or two in your kettle - it won't feel a thing. Seriously, go to Lowes, HD, or a plumbing supply house and get a brass close nipple and a brass cap to fit. You might also need a couple lock nuts to hold the nipple in place. A 1/2" will work well and you can put all your probes through one hole. If your probes are "L" shaped, make sure they will fit through the nipple before drilling,

                      Welcome, from Oklahoma. It is a great site, isn't it?? I've been here a while myself, and still pick up tips and tricks on a regular basis. Throw us some cook photos when you can!!
