Hello gang. Im Dean from Mokelumne Hill CA, population 500. It's in the western Sierra mountains south of Lake Tahoe. I'm 51 and have loved grilling and smoking food since I was a teen. My dad showed me how to cook for dozens of people in 55 gallon barrels at Lions Club fundraisers and other community events. He taught me to cook meat, but always emphasized the importance of your sides too.
I've been using a pellet smoker almost exclusively lately. I got a Rec Tec smoker about a month ago and have been making excellent brisket and pork shoulders. It's a lot easier then setting my alarm to get up and restock the wood in the old wood pit.
I bought Meathead's book so I'm visiting as a guest member. I'll pay when it's over as I'm real interested in these forums. DK
