    Quick introduction: I'm English but now a US citizen living in Texas. I think like most of us, I enjoy entertaining on the back deck with a beer and some well prepared grub! I typically cook with a weber 22.5, but also have a gas grill for when speed is of the essence, a Pit Barrel Cooker when lots of meat is needed and a pig box (caja china type thing) for when only a whole pig will do. Love the site - great advice, logically and thoroughly researched. Well done all contributors.

      Great last name and choice of cookers!!!

      I am Cajun, but in east Texas since 2001. It is similar to English, just a bunch of water dividing the two.
