    Hello from Avondale Arizona.

    The summer here is finally coming to an end and ready to bring out my WSM to start a new season of cooking. Still learning this craft of "smoking" but I enjoy every minute of it. So far I have cooked ribs and pork butt's which came out great every time! Still getting all my information together on how to properly cook a brisket. That will be the true test of my skills.

    Stick with Meathead's Texas Brisket recipe, and follow things to a T, and you'll nail it!
