Hello everyone, my name is Paul and I'm from England (North Lincolnshire to be more specific).
I became interested in BBQ after watching Man V Food and Diners, Drive ins and Dives on Food Network. Unfortunately until relatively recently there were no true BBQ joints near me in the UK, that was until 2012 when Reds opened it's doors in Leeds (still over 50 miles away, but close enough!!). Ever since I took my first bite of their bucket of ribs (literally a metal bucket filled with babyback, St Louis and beef short ribs) I was hooked. I've been back dozens of times since, to the point where I became somewhat of a regular.
I've been toying with the idea of trying to try and create some of their dishes but had no idea where to start, until I stumbled across this site. I've been addicted to the site for the last couple of weeks, spending hours reading countless articles. I've also bought Meathead's book, which I've already read cover to cover.
I've already bought myself a Thermoworks Smoke unit so I can do Meatheads indoor ribs for my Christmas dinner (I don't like turkey so I'll be having wings and ribs) and will be buying a grill for smoking in the not to distant future.
In the meantime I look forward to getting to know you all and learning plenty.
