    Smoke it UP!

    Hi folks!

    As brand new as I am to the Pit, I am to smokers and everything to do with smoking food. I have just gotten the text telling me my electric smoker was just delivered so all it well and I'm set to roll.

    I'm in my 50's and have never attempted to smoke any food. I have grilled many items and I am a fair cook in the kitchen, throwing together my own recipes and adding ingredients on the fly.
    I enjoy running my garden, hunting, fishing and just about anything else outside (even mowing the lawn!).

    My favorite beer is........... the liquid kind. Seriously, I would have a difficult time picking just one but Guinness, from the tap only, is up there.

    I am here to read, learn, participate, and become a reasonably successful smoker of meats of all kinds.

    Welcome, and prepare to be bitten by the desire to smoke everything! Best first thing (suggested to me, so I am passing it along) is Pork Butt. Then Ribs. Then, well, look through this site, pick something, and go to town!

            Porkies once you get a hang of your new smoker you will want to smoke almost everything. Not sure if I'd go as far as FireMan said but you will have a blast smoking a whole lot of things you didn't think you could or would smoke.

              I believe it, Steve. I already have plans for stuffed jalapenos, vegetables, and an easy meat for this weekend. I am searching the forums now for the 'easier' meats to smoke. Also, i need to find out how I should season this new smoker, or if I should just follow the manufacturers advice.

                      Thank you all. I forgot to mention I live in Tenn. Born in Ok, and lived a good while in Tx. One would think I could create some decent bbq?

                      What you need to know about smoking is that it is an exact science. No variations are allowed. If a recipe calls for 1/2 tsp of salt and you are one grain over, you are history. If you believe anything I just wrote, you are in the wrong place. Welcome to a group of folks who will help you and encourage you. There is a bit of science mixed in here with a whole bunch of experimentation and fun. Welcome to the group and remember to post the successes and the failures. We all learn from each other.

                      Welcome to The Pit Porkies! Glad to have you here, thank you for the support. You're going to love the new hobby, and congrats on the new smoker! We expect to see some pictures of your experiments. Also, one thing many folks neglect to tell someone new to smoking meat- oddly enough, and science has a hard time explaining this- your pants shrink the more you do this and test everything. I don't get it, they just sit there in the dresser disconnected from it all, but it happens. Beware!

                      Since this is your first post, please check out our homework assignment post for new members, it contains a few how-tos and please-dos. This will help you learn your way around so you can get the best experience from our forum.

                      Also, it's very important that you:
