I remember the day I cooked a perfect pan of lasagna on my weber kettle because it was just too freaking hot to cook inside and my family thought I had lost my mind until they sat down to eat. That was 41 years ago and that same kettle is in pretty good shape even today. I worked to master weber's direct and indirect techniques and after all those years had it all figured out NOT.
I've only been a member here a few months but thankfully my game has totally changed. I did finally upgrade to a weber performer a couple years ago but just wasn't happy with how much charcoal it took to get a good direct fire working and then I found AmazingRibs.com and the wealth of experience here. Added the SNS, a Lavalock gasket for the lid, a mk232 for temp monitoring and abandoned weber's direct / indirect for low and slow or reverse sear with spectacular results. I've even adapted these techniques to a small built in gas grill I use on our screened in patio during winter conditions with great results.
So with all the product reviews, great posts from all including a glimpse here and there from the members on the competitive circuit I continue to evolve. Added a GMG pellet grill which is a different experience and because feeding my inner caveman was just too tempting ordered a PBC this morning. Life is good.
