I started smoking about 12 years ago with an off-set firebox but it was a cheap one and I got sick of the babysitting. I got a propane smoker but it tended to cook too hot. Now I have a Pit Barrel Cooker and it's just right!
The first time I ever smoked a brisket I used Meathead's recipe and technique, so all these years later I figured I owed it to him to join the club!
I've preordered a Joule so will be curious how that will incorporate into outdoor cooking when it arrives next month.
I also used to brew beer but Cincinnati has too many good microbreweries these days so it's easier to buy it, and I've never bought a batch that ended up tasting like vinegar. ;-)
