I frequent Amazing Ribs very often and recommend all of my friends to it when they have BBQ questions. I am pretty much our resident expert. I am an avid amateur that likes to entertain for friends by BBQing as much as I can.
I am in the US Army as a Company Commander with a total of 26 years of service. I am retiring next year and have noticed that Colorado Springs has a shortage of BBQ stores, not restaurants mind you, but stores that sell the materials that we use. I plan on opening a shop here in the Springs selling grills, smokers, sauces and rubs and the assorted items that make us great BBQers.
Whenever I want to try something new, this is the first website I hit, looking for new and interesting recipes. I started on brisket, taught to me by a friend in Germany, who in turn was taught by a GERMAN! I worked and researched recipes and techniques on how to make a great brisket and my friends and family tell me that I make a great brisket, and some of them are from Texas! I then moved on to mastering pulled pork. I personally think I make the best pulled pork that I have ever had, and this has been supported by people from the Carolinas and other Southern States.
Ribs were always my Achilles Heel. It wasn't until I found the Last Meal Ribs that I finally mastered pork ribs. I don't want to give away all of my secrets yet, but they are pretty damn good....
Last year I finally smoked a turkey and it was glorious! I smoked it on my Egg and it was easily one of the best Christmas Dinners I have had!
I learned to grill vegetables, and now I am known for making the entire meal on the grill. I think nothing is better than grilled Vidalia Onions! I figured out how to make fire-blacked peppers and now my fajitas are unbelievable!
I dislike seafood (maybe because I am Catholic?), but it has never stopped me from making it since the rest of my family loves it. I have grilled lobster tail, crab legs, shrimp and fresh water fish.
Pizza on the grill? Fugetaboutit! I make my own dough and have made many different types of pizza. My favorite is BBQ Chicken with Jalapenos, ala' Schlotskis! It is a staple at our house!
My goals are to do a whole pig, tri-tips, master beef short ribs and wild game. I am sure there is more out there for me to give a try!
I use a Vision Egg ($500 at CostCo), a Charbroil Infrared 4 burner gas grill, Charbroil Big Easy and a Kingsford Cheap Offset Smoker that I modified from this website. I live in a townhouse currently, but we are buying a bigger house soon and I will be building an outdoor kitchen with a serious smoker and pizza oven.
I am a BMW, well, I guess fanatic is a proper word here, and am a member of a great BMW Club, BMWCCA and ///M Flight. I am the father of two wonderful teenagers, one of which wants to be a professional chef and has learned as much about BBQing as I have.
I am an avid researcher and am constantly researching new recipes and techniques. I am not afraid of trying anything, at least once....
