Hi, I've been grilling and smoking for a few years, various gas and charcoal grills plus a Bradley electric smoker. I've recently bought a GMG Daniel Boone and looking forward to learning how to improve my smoking. I'm a bit of a nerd when it comes to collecting cooking gear, I've various sous vide kit and a wfo which I mainly use to produce pretty good sourdough pizza.
I enjoy the technical/scientific side of cooking and challenging some of the oft quoted dubious advice given by mainstream cooking media.

Rubs with salt: Meat Church, Meathead.
Rubs without salt: SnS Grills Rocky's Rub and Not Just for Beef.
Rubs home-mixed: None at this time.
Spices: Lots of 'em.

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.
