    Hello from South Florida

    SmokeyGator here, from Miami Florida. I live close enough to the great swamp that there might be an alligator in my front yard right now (but more likely just a python). Anyway I received my book and it is awesome. A few things I suspected have been confirmed, a few things I was doing was MTYH (so I quit doing it). At the neighborhood July 4th festival my brisket won the informal friendly battle! So I'm off to a decent start. Hope to pick up a lot from this site!

    Welcome to the Pit!! We are happy to have you. Sounds like those Pythons are becoming a real environmental issue down there. Thats' why I love my Minnesota winters, it kills anything that doesn't belong here. (that includes people) Here is an idea, get a machete, chop the things head off and throw it in the smoker. I guarantee there is some one in the Pit that would know how to cook that sucker!! Hahaha

      Welcome to the pit, enjoy the Wikipedia if BBQ. Sounds like you are off to a good start. There is a saying around the pit - if no pictures id did not happen - Looking forward to seeing your inputs.

                Thanks everyone!

                Smoked some fresh wild sockeye salmon today. I used the brown paper bag tip from the book - and the skin came right off! It's good stuff. 2 or 3 hickory chunks plus apple wood chips - and a simple rub of garlic powder and black pepper - with just a little "slap yo mama hot Cajun seasoning". I enjoy sockeye season.
