    Hello from Thailand/NY

    Hey all

    i spend most of my time
    in thailand.

    to beat the “smokey season” (yes that is a real thing. Ut not what you think) i hand out in upstate ny.

    currently using charcoal. Just got an old vision egg style cooker. Looking into buying a a workhorse pits 1975!

    did my 1st brisket last night. We will try it later today. Minor issues. I think my temp was slightly high as it cooked in just over 9 hours. 12.5 pounds. I check it at 2am. It was like 208 and probe tender all over so i pulled it. I will know in a couple of hours.

    any and all info on offset cookers would be great.

                Since we don't know the weight of your brisket we can't really comment on the cooking time, but it appears to be in the ballpark. As far as temp goes, people cook them anywhere from 225° to 350° with good results.

                How are you holding it until it's time to eat? Keeping it above140° is important for safety, and it helps with tenderness.

                  Welcome from central Ohio! I looked at the 1975 myself. Seems like a solid offset. I'll let others with direct experience chime in, and I'm sure you'll find lots of helpful folks here!
