My name is Matt I’ve been on this site for a while but only recently joined the club. I’ve been smoking stuff for 20 plus years at this point. I do have a Culinary background from working in restaurants when I was younger and my grand parents owned a diner in Texas, my mom taught me all the recipes that were popular. I started on an offset smoker and used that for years until changing to a WSM 18 for ease and control. I currently have the WSM 18, Weber Kettle 22, recteq deckboss 800 pellet grill, Weber Genesis propane and a ooni koda pizza maker. I use a ThermoWorks RFX Wireless with Billows for the WSM and I have a thermapen one for all other temps. I enjoy golfing and fishing when I’m not at Pit. Looking forward to chatting with y’all
