    Hello all I have just joined on the free πŸš† l but will be joining properly after the trial , I'm from Norwich England UK , beginner but very keen to learn how to smoke low and slow , I am seriously thinking of starting a high end catering food stall specialising in low and slow smoked meats , going to order the recipie book but also I am keen on doing a pitmaster cooking course to learn from experts how to do it properly, any advice would be gratefully received, I used to be a chef many years ago and can BBQ but have no experience of smoking, thinking of purchasing a master built 800 gravity charcoal smoker , going to do smoked beef brisket, smoked pork ribs , pulled shoulder of pork and smash burgers, and advice and or tips would be much appreciated regards Richard

                I have the Masterbuilt 1050 and love it. As much as I do love it and with the thoughts of running a food stall, I would recommend looking at the Masterbuilt XT. I wish I had seen this model when I aquired the 1050.
