Hey there, I am Bibbs, and as the title says, I'm over in South East Missouri, ive got a couple of grills, my char grilled komado, a Cuisinart pellet grill (need to clean out that auger... it got stuck) my masterbuilt 800 gravity series, and a little electric smoker, the 30 inch from masterbuilt, and what prompted me to join up here is the purchase of my new Oklahoma Joe Bronco, I'm hoping to get that assembled this weekend, and get back to something closer to how I learned (I learned how to smoke with my father and his home made reverse flow offset smoker, and then started with my own char griller offset, made some awesome food, but went the way of convenience for the last decade or so, and want to get back to that stronger smoke flavor that I grew up making) as I was researching which drum smoker I wanted to go with, I kept coming up to this forum, and decided this seems like a good place to be.

I enjoy cooking ribs (pork or beef), pork belly, brisket, burgers, ribeyes, chicken (usually boneless/skinless thighs), and skirt steak for carne asada.
Beverages - Alcohol isn't my jam.
