I've been a member for a while now, but haven't gotten around to posting. I bought my first 'real' grill in 2018, a NG Napoleon Prestige with a rotisserie.
When the pandemic hit I thought I'd try to branch out my hand at smoking and cooking over charcoal. I found a used Napoleon Apollo smoker on Kijiji and have been learning the ins and outs of it since.
One day I may upgrade to something more substantive, but it's been able to handle big and small meals so far.
A few meals from over the years. Smoked wings and spatchcocked chicken; FIL birthday boneless rib roast; Thanksgiving full packer brisket; NYE tenderloin; Thanksgiving Turkey.
