    Fish 125 F, good pork 145 F unless it's shoulder then 203 F; brisket 195 F for slicing; 203 F or higher for tenderness; poultry 150 F held for ten minutes on white meat; 175 F for dark meat. Any questions? :-) Camel and goat are like beef. Alligator is like chicken. Sheep is like goat.
