I bought my first smokers (a Lang 60" offset smoker trailer & a Fast Eddy FEC100 pellet smoker) in 2007 and competed as the BBQ Posse all around Central Texas for 10 years. We didn't win a lot of trophies, but our team had a great time and fed a lot of family and friends. Now I occasionally host barbecue and grilling workshops for various religious organizations and make my wife happy by cooking outside several times a week. I think that my barbecue is as good as any I have ever tasted, but I learned a long time ago that confidence is only slightly less important than actual knowledge and skill. My wife also likes a smokin' man.

Welcome! I drive through La Grange several times a year, beautiful part of Texas but coming down the hill (Hwy 77) at night for the first time was a little nerve racking.
