Hey all, I’ve been a long-time Pitmaster club member but have never posted anything (that I can remember, anyway!).
My first attempt at smoking was ribs on a Weber kettle with 2-zone set up (can’t remember what instructions/recipe I used, it was more than a decade ago. Since then I’ve had 4 different traegers, a weber Smokey mountain, multiple pellet tubes/mazes for cold-smoking, and just bought a pit barrel and successfully smoke a bone-in Boston butt on it.
I have also recently been deeply infected with a bug for an offset stick burner. If I can get permission I would to get the Franklin pit, but given the cost, will likely end up with a workhorse 1969 or a “solution” (mad scientist/frank cox).
I’m a lawyer but have always regretted it and wished I’d gone to culinary school instead. Cooking / smoking food and watching people enjoy it (and enjoying it myself) is my happy place. Married with 2 growing boys (12 and 9).
Best thing I’ve ever made is 123A ribs with a 2-3 hour cold-smoke with post oak pellets and hot-smoke on the traeger.
