My name is Juan Pablo Berrocal, I ve been a professional chef for 17+ years, and long time bbq fan. I grew up in the north of Costa Rica, which is predominantly cattle country and super touristy. Curiously enough, I only smoked for friends and family, up until this past february when I open my first BBQ joint, it's called "Chancho Nosara" (costarican slang for pig).
