    New member in the house

    Greetings all! Been smoking and cooking great meats for about 8 years and recently finished attending Camp Brisket back in January held by Foodways Texas and Texas A&M university. Been stepping up my game since. Just got back from NY and decided after having some great pastrami, that I'm going to take on curing the old corned beef and applying the smoking skills to that! Great info here and looking forward to learning and sharing what I already know

        Welcome to the Pit! I spent several years in Plano when I was with ARCO Exploration back in the mid-80's. Nice place then ... and I'm guessing it's grown a bit since I saw it last.

        Sellin2Buy, Welcome to The Pit! At North Dakota State University (NDSU) they have an out reach Program called BBQ Bootcamp! It is a joint effort between many departments from Food Science to Range Science and the Various Livestock Production Depts, it also is supported by the USDA, Beef and Pork Check Off Programs! I have attended it 3 times now! Learned Something Each Time!

                Welcome to The Pit Sellin2Buy . I just researched the Camp Brisket program last week after finishing Aaron Franklin's book. I would love to attend it myself. Sounds like it sells out almost immediately. Good luck with your cooks.
