Hello from Maryland. I’d like to apologize for not having introduced myself before this. I’ve been lurking around this website for many years, but I’m not good about calling attention to myself. I’m more of a reader than a talker. I’ll try to work on that and contribute where I can.
As for me, I'm retired and I love to cook, especially outdoors. And, I have a family that loves to eat, so it all works out. Meathead’s instructions for brisket taught me to do it right. I did my first ever brisket on a Weber 26" kettle and it was fantastic. A 17 lb brisket disappeared with scarcely a burnt end left to put in the freezer.
Since then, I’ve added a Weber Summit six burner gas grill, a Weber Smokey Joe, a Camp Chef pellet smoker, and an Ooni Karu to the arsenal of outdoor appliances, but the 26" kettle remains my favorite. It’s where I do probably 80% of my outdoor cooking. It grills, it smokes, it roasts the hundreds of chiles I bring in from the garden each year. The kettle goes year-round through summer heat and winter snow and never fails. Pellet grills...not so much, but that's another story.
So, what’s for dinner tonight? Smoked Huli Huli chicken, smoked meatloaf, and smoked baked potatoes. The weather forecast calls for several days of thunderstorms, so I’m taking advantage of a nice day to cook a few things ahead. Dessert will probably be grilled pineapple with ice cream since the rabbits ate my strawberries, but that's another story, too. It’s nice to finally be here, thanks for listening.
