    Hello!

    Hey everyone, I'm Simon from the land down under! I've been looking at this site so often in the last month I thought it's a sign to well, sign up! I love to BBQ and Sunday is usual my big cook day. I done both the pork and beef ribs recipes from here and wow, people think I know what I'm doing now! The next big challenge is this weekend when I attempt my first brisket for 8 friends. Hopefully they'll be too drunk to notice if I mess it up. Anyway enough babbling from me!

                  Welcome to the Pit! I don't know what you are cooking on, but if it a Weber Kettle you mignt be interested in the YouTube video by an Aussie using the snake method to do ribs low and slow.

                          g'day mate! GOOD LUCK on your 1st briskey, its intimidating, but do plenty of reading on here and you'll be fine. i lived in coogee and worked in the CBD for a couple years. Seems like the american style bbq scene has really taken off since i left in 2012! Cheers Sydney Simon

                              Welcome Simon, glad that you're here! Some day we'll have to have a discussion about Australian Wagyu beef, I hear that it rivals the Japanese Wagyu.
