    Welcome! Your kamado/Akorn knockoff is perfect for beginning smoking. Get yourself a pork shoulder or butt, some rub (any rub), and a leave-in thermometer. Just set the kamado to 275° indirect, put the meat in, and take it out when the meat hits 205°.

    It really is that easy to get started. Don’t overthink it. It’s just a big ol’ hunk of meat.
