I'm rofltech, I have been cooking for years and loving it but never really got into bbq. My dad got me a grill last year and I've used it all of twice for burgers (and set it up incorrectly according to just about every post on this site)...though I do sous vide a lot and cook for a living. I have just ordered a slow n sear as well as some wood chunks off amazon to hopeuflly add this to my skill list.
I have really been interested in making my own bacon as well as sausages and other chracuterie signed up here to learn more and see what others are doing. My passion is cooking..I hope to learn a lot from you all.

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
Cookers:
Large Big Green Egg with a Ceramic Grill Store rack system, and the SnS setup.
Weber Genesis SA-E-330 LP INDIGO with SS Grates, Weber Crafted frame kit, baking stone, griddle (2/3), all from Ace Hardware.
For the first time in a long time I have no kettles as I gave them all away.
Everything Else:
SnS #3 with certificate. I was their first customer.
Sous Vide equipment.
SnS and Thermoworks instant read and leave-in thermometers.
Grill Grates for BGE.
Kingsford Blue Bag, Weber lighter cubes, Weber charcoal chimneys.
Rubs with salt: Meat Church Holy Cow.
Rubs without salt: Home-mixed versions of previously sold SnS Grills Rocky's Rub and Not Just for Beef using their recipe. SPOG.
Spices: Lots of 'em.
I have not made any yet. I'll hopefully make some middle of the month. Have to find somewhere that sells pork belly first. Main meat market around here is only open a few hours a day.
Even though I live in West Texas lots O cattle and pigs raised here, We dont have a real Butcher (only the grocery store fake ones) but last year Costco came to town and they have the best meat (prime and choice) the one here started carrying pork belly as well.

Wow they have a lot of options there. I just grabbed mesquite, Apple, and hickory for now. Got 5lb of each which it looks like people use about 2 small chunks at a time should last a while.
What are your favorites and what do you use them for?
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.
