I love the Memphis Grill, but cannot find the recipe where the bone is removed in the fat pack is removed round and cooked at 225°, but cannot find the recipe in the webpage

Welcome to Pit from Dallas, Texas! I am not sure what kind of recipe you are looking for. Beef or Pork? What cut of meat? I would guess pork shoulder. If that is it just cook it like a bone pork shoulder. If you are looking for a how to trim the fat cap and remove the bone YouTube probably has a video on that. Happy cooking!
