I'm an attorney for about 30+ years, and had a restaurant for 12 years where we did all scratch cooking. I did pork butts for the menu, and did them all in a smoke hollow PS4400. Pandemic and associated weirdness killed the restaurant. All of a sudden I didn't have a hobby anymore because the restaurant was closed. I learned in that decade that I really enjoyed cooking. I got a pit boss pellet smoker, cleaned up my sous vide equipment, and downsized my sausage making stuff, so here I am learning to smoke, combine sous vide with que, and curing meat for the specialty stuff I had to source when we had the restaurant. I just found this forum, and hope to learn and maybe offer some insight.
