Hello folks ... name is Rick and I'm 67 years young ... born in Dallas and have lived within 40 miles of it all of my life. Around 1961 my father bought a horizontal 55 gallon barrel smoker to replace his cooker made from a large cast iron wash pot on a tripod which I pulled over learning to roller skate and barely missing my head. When I was about 10 I took over the gas grill ... and a year later I was handed the reins to the smoker.
Dad really liked his briskets ... so I probably smoked 25 to 30 Sunday briskets a year from that point on for many years. They were always prepared the same ... heat up a pan with apple cider vinegar and a goodly amount of ground cayenne pepper and poured over the brisket 30 - 45 minutes before it went to the smoker. That was it. He got that from a pitmaster he really liked in deep East Texas. After he passed I finally got to experiment with dry rubs and all other types of foolishness.
I currently cook on an offset smoker from Oklahoma Joe's ... which I bought two years ago to finally replace that old rusty ass 55 gallon smoker of dad's. It has taken a little getting used to ... but does a pretty fine job now.
I live alone except for a noisy little 1/2 Yorkie - 1/2 evil dog ... he tries to live on my lap. I'm a retired phone man from Southwestern Bell/SBC/at&t. I have a house here near Dallas and a small off-grid cabin on 160 acres in Southeastern Oklahoma. It's a real pleasure being a member of this fine bunch of folks.
