            Is that the dry aging thingie that looks like a little fridge? I tried my hand at charcuterie a few years ago, prob will again, but haven't yet. A local brew pub/brewing and cheesemaking store, and they have a group that meets weekly to trade brews and whatnot they've made. I went a few times, and IIRC a couple of guys had them and they sounded cool. Never looked any farther into it, I didn't really have the time then to put into really getting into it, so I let it lie. Do you use primarily for dry aging steaks, etc, or have you gotten into the charcuterie world? And hello, from Tampa, FL. I assume you are nowhere near here, the only walls here are seawalls.
