    Thanks for all the work you do to provide such an entertaining and informative site. I have used the regular site for awhile now and really enjoy understanding what I am doing when I BBQ. I am a very average cook using an egg clone (Saffire) and a gas grill. Your method and rub for short ribs was great so I am doing them again tomorrow. Like many in the northern US, I cook through the winter here in Ottawa, Ontario. My wife thinks I'm nuts. I am, so that's why I am here and looking forward to learning even more from all of you and your members. Keep up the good work!

    Welcome, having a mini heat wave here, gonna hit 70. I don't let the cold stop me, though I think our winters are like your spring.

      Thanks John. Hmmm, well having switched to metric many years ago, guys my age (62) have no idea what's going on. I grew up with fahrenheit, only know celsius for outdoor temp (had to check a temperature converter - so we are having a mild winter this year. Temp is only -7C at night and +3ËšC during the day. So that is our heat wave for this month. We've only hit -25ËšC once this year. That being said, i can only cook in Fahrenheit (pretty much all Canucks do too), understand inches of snow way better than CM of the crap lol, I woodwork in imperial as well and do my work in MM and CM. So if you think we are messed up, add that to the list lol! so your 70ËšF is about 21ËšC here so you are bang on John, that would be our best Spring weather. Thanks for the welcome from everyone.

    Welcome to the Pit! Ceramic cookers like yours make itveasiervto get through the winter. I am not familiar with the Saffire cooker, but thick ceramic walls help,when doing low and slow. Every brand of cooker is different, so it is just a matter of adjusting and learning your cooker.
