    Hello from Raleigh

    Growing up in North Carolina and specifically eastern NC, BBQ is a fundamental belief that is anchored from an early age. I have always been a backyard enthusiast but over the past 8 months I have invested in updating my knowledge. I have embraced the reverse sear completely and now cook most of my meats using indirect cooking. This change is due to materials and science largely learned from this site. Thanks Meathead for the guidance and I look forward to the continued learnings.

                    Thanks for the warm welcome all.

                    For cooking gear, I have a Primo XL that is used for most all meats and some veggies, a overly large FireMagic Echelon i1060 that is mainly used for large cooks and primarily for veggies, and a FireMagic Echelon Power Burner that I use for blackening, turkey frying, lobster boils and oyster steaming.

                    Family favorite dishes are ribs, pork butts, cowboy ribeyes, wings, hula chicken, and tuna on the meat side; on the veggies the go to choices are brussels sprouts, asparagus, corn, jalapeños and banana peppers.

                      Brussels sprouts, asparagus and corn is my family's favorites too, throw in garlic-sauteed broccoli and one of them is at pretty much every meal.
