    Aloha from Mililani, Hawaii

    Hey Guys,

    I am a newbie to the world of smoke. I love cooking and started with a Orion Cooker(everyone will boo this, but it got me started). I just recently bought a smaller smoker called the Oklahoma Joe Bronco and am loving it. I took a chance and smoked a brisket as my first meat and learned that longer is better. The taste and smoke ring was perfect, but the tenderness wasn't, so back to the drawing board. I recently was givin a tray of turkey thighs and that was the bomb!. So this week being Thanksgiving, I am going to try a 16 pound turkey spatchcock style. Wish me luck.

      Welcome and happy thanksgiving. Lots of love around here for the Bronco and some folks have lots of experience with it so ask if you've any questions. And of course, hit up the public side for recipes.

                          Welcome to the Pit from the Florida Suncoast. Best of luck with your turkey. I think most folks here would recommend cooking it at 350 to 375F to get the skin crisp. Let us know how it goes, please.
