Glad that I have finally taken the plunge and joined the pitmaster club.....already can see it was well worth it. discovered amazingribs.com a few years ago and it has done wonders for my Q....I can't tell you how many people I have referred to this website for info and to back up stuff I am doing on my smoker......I have a cheapie gas cabinet smoker made by Brinkmann that is rusting away under a cover ...hardly use it anymore....got a weber 22 inch kettle that gets the most of my smoking duties....eagerly awaiting the arrival of my smoke-n-sear. Looks like a winner...if it improves my cooking as much as the smokenator 1000 did, I will be happy.....seems like a major advantage over the 1000...got sick of trying to shove larger wood hunks into those small openings on the 1000...anyway, I am barbqing away here in the wastelands of NJ....so hard to get a decent "packer" brisket here without spending major $$$$$.....but I do get excellent reasonably priced ribs and pork shoulder from sam's club, so all is not lost....good luck with the newest venture, and when will meathead's book be available???

Welcome to The Pit YUKONPETEY! Thanks for joining in the fun. You will definitely appreciate the Slow 'N Sear when it arrives, with a 22" or 26" kettle grill it's a match made in heaven, like salt to pepper, peanut butter to jelly or better yet peanut butter to chocolate! With Weber's hinged grates there is virtually no restriction on the size of wood or amount of coals you can add, although you don't need to pile it really (but you could and that's the cool thing!) If you need any help with any techniques when it arrives, we have a channel here in The Pit about it, Meathead has a page about it at the main AmazingRibs site, and of course we can answer questions in the Disqus comments on ABCbarbecue.com, home of the Slow 'N Sear!
Meathead's book should be out this coming May 2016.
Since this is your first post, please check out our homework assignment post for new members, it contains a few how-tos and please-dos.
Also, it's very important that you add the domain AmazingRibs.com to your email safe list in case you are ever drawn as our monthly Gold Medal Giveaway winner!
Hope to hear & see more from you!
