I'm a relatively new cook who recently purchased a MasterBuilt smoker on a whim (fire sale at Home Depot). I pre-seasoned it with propane, and that went well. I tried the Last Meal rib recipe today with charcoal, and that did not go well. However, I learned a lot about thermometers, done vs. ready, ash, and the unimaginably frustrating complexity that is managing temperature with vents, among other things. This site was an outstanding resource, so I decided to sign up.
I don't have any success photos, but here is a frame from video feed I was using to watch the temperature on my basic ThermoPro TP17H soar above 250 and plummet down to 185 throughout the day (I was in and out a lot today).
The ribs looked done, but never registered above 170. Maybe the therm is to blame, I don't know.
