Thanks everyone for the warm welcome! Hearing that a whole packer will fit on my 22 with the sns is about the best thing that's happened to me since our son was born! Will definitely start with a chuck though. Fire management on a long weekend cook with with the rugrats around has been a bit tough and as much as I enjoy doing it, I've been toying with the idea of either getting a spider venom for the 22' or a GMG Trek for days when I wanna BBQ but also wanna take the family on outings and not have to babysit the meat as well. Any thoughts on either of those options?

Yup. You’re full on infected with MCS. 🤣🤣 there are lots of great options to meet your needs. Pellet smokers are a pretty good set and forget type option for you once you figure them out (from the guy the bought his first one this week…). Depending on how long of an outing you want to take, a drum smoker could work for you too. I have an OKJ Bronco that I absolutely love. I’m not super comfortable leaving the house with it burning, but it’s absolutely stable enough that I can ignore it.

Any recs for a good temp controller? I have a solid thermaworks thermometer but I will say the fire board looks awesome!

I use the Fireboard I linked to above. You will also need a fan such as the Pit Viper Fan, and an adapter to attach it to your Kettle. You should be able to go 5 or more hours without touching your Kettle. And you can monitor the cook from your smart phone.

Ohhhhhh I’m such a newbie when I looked at the fireboard I thought it was just a great digital thermometer I didn’t realize it powers a fan! Sorry!

Howdy brother!! You definitely can cook a brisket! I ruined a lot of briskets before I got a good product. I personally noticed I was getting a better product wrapping the brisket in foil when I hit the stall. It didn't come out dry like all the others. Thats just how I've had success. I know some wouldn't recommend it but its what has worked for me.

To piggyback on Cnatter ‘s comment, everyone has a different point of view related to wrapping a brisket, AKA the Texas crutch or just crutching, personally I don’t wrap at all, but do what works for you!!!! Some people wrap with foil and have great success, some with pink butcher paper, and some not at all. I would recommend trying all methods and finding what YOU and your family like best. Then run with it!!!
