    Hello from Columbus, GA

    I've been kicking around here a few weeks now and finally got around to my introduction post.

    I was born and raised outside of Atlanta, but have been in Columbus GA since 2008. I am an avid cook, and really enjoy foods from around the world. I taught myself to cook in the pre-youtube days through a lot of trial and error, and it remains one of my greatest passions. I have experience with sous vide, some gourmet (predominantly French style) cooking, and a lot of one-off experiments with Indian, Mexican, Vietnamese, Ethiopian, Greek, and Japanese food.

    I started grilling circa 2010 with a 22" Weber kettle I bought off Craigslist for $25. I burned a lot and learned a lot! Around 2014-15 I learned about the Slow 'N Sear. It cost 3 times what I paid for my grill but it was an absolute game changer. I have been using that kettle grill until this year (2022), when I finally pulled the trigger on a fancy grill, a Weber Summit Charcoal (WSCG). I've also collected a few other grills over this time period, including a Spirit E-310, a Q1000, and a Go Anywhere Charcoal. I never thought of myself as a Weber fanboy, but all 5 of my grills are indeed Webers! I have the gas grills for convenience and portability, but I'm a charcoal guy at the core.

    I also have an affinity for measurement tools, so I have a ton of thermometers, probes, and temp alarms. Thermoworks has gotten a lot of money out of my over the past several years! I have learned to cook low and slow BBQ with my kettle and SNS combo without the need for much temp tracking and control, but I knew I eventually wanted a setup that was capable of set and forget long cooks. I am just one cook in with my WSCG, and I want to do enough manual cooks that I learn the cooker, but I'm looking forward to adding a fan and controller in the near future for set and forget BBQ.

    I am married with 3 kids and one more due in August. My family mostly likes the results of my grilling, but not all the fuss that comes with be being preoccupied constantly with the cooking sessions. This is a big reason for my desire to get a setup that cooks well without frequent fiddling and intervention.

    I'm very thankful for all the help the folks here have offered so far and I look forward to contributing to this community.
