Alright, I've had some great results with Pork Butt, Ribs and Turkey so I'm going all-in this weekend and doing a brisket. Going to follow the how-to ecowper provided. I was originally planning on wrapping and had been debating a water pan. But since it's a pellet smoker I don't think the pan is needed. Plus I think for this run I am going to follow the instructions as closely as possible...
I picked up the brisket earlier this week and every time I open the fridge I wish it was Saturday/Sunday.
