Greetings! I'm a transplanted Chicagoan living just outside Jackson, MS. I'm currently on disability waiting on a heart transplant but my condition is stable, for now, and I'm spending a lot of time working on my barbecue skills. I've been cooking for forty years and barbecuing for twenty five. I just made Meathead’s bacon last week and have also just made some tasso ham. Both turned out terrific! I enjoy this site and look forward to learning all I can. Today’s tasso is pictured before and after smoking
