Based in Toronto, Chef Ted Reader is widely known as the "Godfather of the Grill". He is an award-winning chef, author, food-entertainer, TV personality, consultant, and professor of Modern Culinary Applications Innovations at the Canadian Food and Wine Institute at Niagara College. Everyone in Toronto knows him. I was recently there visiting family and arranged to meet Chef Ted for dinner. When I got up in the morning, I turned on the TV for the news, and there's Ted grilling away!

Reader's career began at George Brown College Chef School in Toronto. He has since written 21 cookbooks including Everyday Gourmet Burgers (2010). Among his others, Gastro Grilling: Fired-Up Recipes to Grill Great Everyday Meals (2014), Beerlicious: The Art of Grillin' and Chillin' (2012), and The Complete Idiot's Guide to Smoking Foods (2012). They all have won the National Barbecue Association Award of Excellence.

Reader he owns a yardful of grills and smokers, but most impressive is a 1972 Ford Seagrave pumper fire truck he calls Hoptimus Prime, that he has tricked out with everything including the kitchen sink and two kegs of beer on tap. There is a hardwood fired rotisserie smoker/grill and a gas grill, remote control awnings, a VIP dining deck, and an incredible sound system.

Here's a 6 minute video I did on hamburgers including the pasteurizing technique

If I told the kids I could put Cap'n Crunch in burgers I would never stop cooking burgers.

Cool video. I particularly enjoyed this one because burgers are SO easy to screw up. I was most interested in the basics - the do's and don'ts. This video delivered.

                    In summary:

                    Keep the meat COLD.
                    Fatty meat.
Keep it loose - keep the handling to a minimum.
Season the surface right before cooking.
Purchase ground meat as fresh as possible.

Just following these basic steps results in a juicy, flavorful patty and that is by far the most important part of the burger.

Hi. Is there any way to actually download rather than stream? Videos take up Mucho data and we have wireless with limited data allowance. So I need to find a hotspot and download to watch later.

                          Thanks

                          Nick
