Hi Ken, are you looking to smoke in cooler weather too? Thickness will come into play if you're wanting to use the smoker in sub-zero temps. My offset is 1/4 inch steel (6.35 mm) and it can handle very cold temps. The model I had before that was from a box store and the thin metal construction only allowed temps down to around 10 C before it was ineffective. Both produced good BBQ but the thinner one had its limitations with outdoor temps.
Yes, I will be looking to smoke in cooler temps. I came from Alberta and was smoking with my WSM at -25F. Here in Nova Scotia I can get seasoned hardwoods very easily, which I couldn't source in Alberta.

I know what you mean. Field trialing was something to do to keep them in shape for hunting season. I was in Alberta so it was Ducks and geese for us and some pheasants.
Checkout the offsets here for cold weather smoking both my trailers have the bbq vault as well as the magnum sniper on them. The sniper series is a fancier offset. The revolver and the hit-man are traditional tubular offsets. https://pitmaker.com/smokers/
