    Meathead’s Old Smoker Doing What It’s Made to Do!

    I have 7 massive pork butts at about 10 pounds each on the Backwoods Party G2 doing an overnight cook tonight! This is the cook for my friend’s wedding who paid to get me the new racks for it! Definitely cooking slower than normal with so much meat on. We shall see how it does through the night. First slab of meat went in at about 8pm and I need it all off the smoker by 10am.

        It has stayed around 250 at it’s hottest part and is at 209 at its coolest part.

          This is top of smoker to bottom of smoker on red one and meat temp on Grey one.

                I definitely slept through the night while they cooked! Just checked my temps several times.

              I think you better wrap. That much meat is going to take longer. I don’t think it will make it in a 12 hour cook without wrapping. Consider using your oven and raising the cooking temp if necessary. Since you are cooking butts 275 is plenty safe and you can problem get by with 325.

                I just wrapped 5 of them and will have them in the church oven at 325 in a bit. The two on the top rack were done at about 7:30am.

              If you keep them in the smoker, I would rotate the butts top to bottom to help even out the cooking time.

                Here are some of the results! I got lots of really nice compliments and multiple people asking if I have a restaurant. I have around 15 pounds of leftovers that I’m going to vacuum seal and freeze to give to the bride and groom when they return from their honeymoon!

                      Nice work on those pork butts! Congrats, J-Melt , on a job well done. I bet the bride and groom were delighted.

                      And what a nice thing to do, to give the 15 lbs leftovers to the bride and groom. They'll be eating delicious pork but for a while with that amount.

                      So I'm guessing that the 15 lbs of leftovers started out as about 30 lbs of raw Pork Butt, give or take a pound or two raw or cooked. That's just under half of the 70 lbs raw you started with. Were there a lot of no-shows at the wedding, or simply too much food from others providing protein as well? Just wondering. Makes no diff really, since none of it will go to waste, for sure. You probably had some guests wishing they could take some of it home with them!

                      What sauces did you serve with it?

                        Thank you! We were going for 1/3 pound of cooked per person for 100 guests. It ended up being 95 and we thought that the bridal party was taking way too much, so we started serving everyone to keep from running out! Then the line disappeared and almost no one came for seconds. Possibly because they were served lots of sides. Not sure.

                        I’m really glad I talked them down from 1/2 pound per person!

                      Congrats on a great cook. When they start asking if you have a restaurant you know you knocked it out of the park.
