Lightly muddle the mint with the simple syrup in a shaker.
Add the rum, lime juice and ice, and give it a brief shake, then strain into a highball glass over fresh ice. Alternatively, you can use pebble ice instead and gently swizzle it all together.
Top with the club soda.
Garnish with a mint sprig and lime wheel.

We did end up going to that new cocktail bar last night and had their pineapple (I think meaning Plantation Pineapple Rum) mojito. It was okay but nothing special. We like mine better. But the band was good and set the mood nicely for a cocktail bar.
Pretty sure that's not the case, buddy. But you do want to store your honey syrup in the fridge because although honey doesn't go bad once you introduce WATER things change.
